It's not diet food, what can I say? Other than it's worth it. Yes. Yes, it is. It's worth making the sponge and waiting through 3 different rising times, then baking it, and just when you think you're done, you have to rig up a contraption whereby the loaves are suspended upside down for several hours because you don't know if they really will collapse if you don't stack up pots on 3 cookbooks and thread metal skewers into your piping hot loaves, but you don't want to find out the hard way if it it's true. So you do it anyway.
